Sorry I will get that recipe out soon. :blush: I have been very busy at work, going in early and coming home late.

This morning I had a toasted wheat bagel thin (the one's by Thomas' are very good) with Polaner All Fruit seedless raspberry spread and some OJ.

I've been bad with my eating habits lately. Yesterday I had the angus burger at McDonald's. ( Very bad for you but also very,very tasty) and today a had a six-inch Italian sub. Maybe tonight I'll get back to something good.

And Animator, whenever you have the time for the recipe that'll be fine. Believe me, I know how busy life can get!

Ok, so here (FINALLY!) is the recipe for a cream-free potato-leek soup that I made a couple of weeks ago. It is based on the recips from America's Test Kitchen.

Makes approx. 5 cups, serving 3-4 people

3 tablespoons unsalted butter
2 - 4 lbs of leeks
1/2 tablespoon unbleached all-purpose flour
2 1/2 cups chicken stock (preferrably low-sodium)
1 bay leaf
1 lb potatoes, peeled and cut into 1/2-inch dice. (Note that their recipe called for red potatoes but I only had white. It came out fine but the red would have added a little more flavor and color.)
Table salt
Ground black pepper

Chop off the roots and tough dark green portion of leeks, leaving white portion and approx. 3 inches of light green.
Cut into 1-inch sections.
Soak in cold water. You may need to change the water a couple of times as leeks are usually very dirty.

Heat the butter in a Dutch oven over medium-low heat until foaming.
Stir in the leeks, increase heat to medium, cover and cook, stirring occasionally, until leeks are tender but not mushy, 15 to 20 minutes. Do not brown.
Sprinkle flour over leeks and stir to coat evenly. Continue to cook until the flour dissolves, about 2 minutes.
Increase heat to med-high and whisking constantly while gradually adding the stock.
Add the bay leaf and potatoes; cover and bring to boil. Reduce heat to medium-low and simmer, covered, until potatoes are almost tender, 5 to 7 minutes.

Remove pot from heat and let stand until potatoes are tender and flavors meld, 10 to 15 minutes.
Discard bay leaf.
Season with salt and pepper.
Serve immediately.

You are welcome! And I would add some additional veggies to spread it out some - like some carrots and celery.

This past weekend I made pan-seared filet mignon with a red wine reduction sauce, with butternut squash risotto, and steamed broccoli. :cheer:

Tonight though I was bad and had a large steak and cheese from one of those greasy sub shops. It tasted very good but I know I will feel it tomorrow AM when I go running. Oops. :blush:

I had two slices of wheat toast with Polaner Sugar Free Raspberry spread, a banana, and two large glasses of water for breakfast earlier this morning. Now I am off for a run which will quickly be followed by a snack - and hopefully a healthy one.

Animator, its nice to treat yourself once in a while. its the more often than that which is bad!

today for lunch i had Teriyaki Chicken soup from Healthy Request i think it was. i am going to tell my husband to stock up when he sees the 10 for $10 sales. its that time of the year around here :(

This morning I scrambled two egg whites and had them on a English muffin with a glass of orange juice and a banana. I guess I was a little hungry after my run.

Well pasta part isn't homemade. We're not that adventurous yet. :lol: But the sauce is and it's delicious. We have no plans to go back to using sauce from a jar. ( But Mario Batalli's marinara sauce is quite tasty! Highly recommended when you need sauce in a pinch.)

im having a few pretzel and some Diet Dr. Pepper.

not sure whats for dinner since i dont want to mess up the kitchen! i was off today to get cleaning done, tomorrow i am working but done at 3:30 or 4, then company coming for Thanksgiving feast!

we had a wonderful holiday dinner with my family: my husband Tim and our daughter Rachel, my sister Carol, her BF Doug, her daughter Gina and her BF Greg, my brother Michael, his wife Dede and their daughter Alexa

we will be eating this food for the next three days lol!! hope that everyone had a

We had a great Thanksgiving! In addition to turkey we had French potato salad, stuffing, cranberry sauce, green bean casserole and rolls. It was quite tasty!

what is French potato salad? i have never heard of that but it sounds good! we had a nice holiday dinner as well, way too many things. had the traditional fare as well as whitefish and stuffed cabbage soup!

I toasted a Thomas' Wheat Bagel Thin this moring and spread Polaner's No Sugar Added All Fruit Spread (it needs a shorter name!) on it and washed it down with two large glasses of water.

Rachel made something called Patchwork Casserole she found in one of those brand-name cookbooks. it has sausage, hash browns, stewed tomatoes and lots of good things in it ;)

we have spent the last 3 days baking cookies...Christmas is coming quickly!
